These are another one of my favs because they are super easy to make and oh so yummy in my tummy(pardon the Yo Gabba reference).
All you need is:
a muffin/cupcake pan
eggs
and ingredients of your choice, I like
turkey bacon
tomatoes
spinach/kale
salt and pepper(to taste)
First I spray my muffin pan with coconut oil. I use a misto sprayer so this way I know exactly what's in my oil. I chop my tomatoes and bacon. Tear apart my greens and mix them all together in a bowl with the egg and spices. Then pour your mixture into your pan, you can also use cupcake liners to make the clean up easier. But that in the oven for about 15 mins which will vary depending on the size of you pan and how much filing is in each one.
Serve with slices of avocado and viola a super easy and yummy breakfast! You can add what ever ingredients you like. Mushrooms, onions, sun dried tomatoes, turkery, etc. Whatever you like, put it in there!
